I found the Wikipedia article on the subject (http://en.wikipedia.org/wiki/Cinco_de_mayo) interesting; it indicates that the date was chosen because the "obvious" celebration (Independence Day on 16 September) was too early in the school year to organise stuff in for the students who started the celebrations in the US.

I suppose that would help to explain why it's a bigger thing in the US than in Mexico (indeed, the article also mentions that in Mexico, it's predominantly celebrated in Puebla, i.e. the region where the battle took place).
