I've often wondered about the possibility of sound-based computer games rather than sight-based ones, suitable for blind people but playable by sighted people too.

When playing games that require specific timing (especially in minigames), I often find that it's much easier to just listen to the timing of the sound and not worry so much about what's happening on-screen. Unfortunately, I can't think of any examples right now, but Mortal Kombat certainly isn't on my list.
